Salad Dressing Recipe


My mum makes an amazing and very simple salad dressing that my friends constantly ask me how to make so I thought I would share it with you. Salads are the perfect summer meal and can be jazzed up with various meats, vegetables or fruits to ensure it never gets boring. Another addition to transform your salad is the dressing and I am not a fan of shop bought offerings as this one is so easy to make and can be altered depending on your mood.

For one person:

1 x lemon
1 x teaspoon of Djion mustard (whole grain is also delicious)
1 x clove of garlic 
1 x large glug of extra virgin olive oil 
salt & pepper



1. In a pestle and mortar add the garlic, salt and pepper and grind it into a pulp. You need to add the salt as it helps to reduce the garlic into a smooth paste. If you do not have a pestle and mortar then you can use the flat side of your knife and squish it until it as paste. 


2. Add in the garlic and lemon juice and mix together. Again if you are without a pestle and mortar then you can shake it in a jar to mix it together. 

3. Add just under half the amount of mixture you have of olive oil and mix again. 

4. Taste. Each dressing will be different as it obviously is very dependant on how sweet or juicy your lemon is and how big your garlic clove is. If you think it is too bitter then add some honey or white wine vinegar. If it is too strong then add some more olive oil. This comes down to personal preference on the day but you should have an excellent dressing that spruces up any salad!
