Steak, Kale & Miso Soup Recipe

This is a firm favourite in my house as it is delicious, filling and so simple to make. 

Ingredients for 2

White Miso Paste
1 bag of  Kale or Cavolo Nero
3 Spring Onions
1 Red Chilli 
Bouillon Powder
250g Rump Steak

Optional Extra: Noodles 

If you are using Cavolo Nero then shred the leaves and chop the stalks finely. 

Pour a little oil into a shallow pan and add the steak, cook it briefly as this meal is better with the steak rarer than I managed in the photograph above! 

Once it has browned, turn over and add the three finely chopped spring onions and chilli. 

Brown the steak on the other side and then remove from the pan and keep covered. 

Pour 800ml of boiling water into the pan with a tablespoon of bouillon powder and 2 tablespoons of the miso paste. 

Add the greens (and noodles if you wish) and leave until they have wilted (cooked). Whilst you wait cut the steak into thin strips. 

Pour the contents of the pan into two largish bowls and place the steak on top. 

Quick, simple and most importantly delicious!
