Salmon Risotto


A risotto is one of my favourite dishes to make as you can tweak it so easily to your own tastes and it is so simple to make. 

Ingredients for 2 people and some left overs!

300g of Risotto Rice 
Stock - I used Bouillon Powder
1 onion
1 stick of celery
1 red chilli
1 glass of white wine
2 lemons
2 cloves of garlic
2 salmon pieces
Butter
Dill
Parmesan Cheese
Salt & Pepper

First you need to heat your oven to about 180C. Then place the salmon onto tin foil and onto a baking tray. Add a knob of butter, the juice of a lemon, dill, salt and pepper. Then close the tin foil around the salmon and cook for about 15 minutes. 



When you bring it out the oven it should look like the photo above. If it is still slightly raw in the middle don't worry just close it back up and leave it as you will be adding it to the hot risotto which will allow it to cook further later. 

Next chop the onion - I only had a red onion and it makes no difference. Sauté the onions in either butter or olive oil, depending how healthy you want to be! Also remember to salt your red onion whilst it is cooking to sweeten it! 

Add in the finely chopped chilli, celery and garlic and allow to them to soften. 

Next add in the risotto rice and stir whilst it cooks. Add in your large glass of wine and half a lemon and cook until the liquid has been absorbed. Cooking your rice like this will not only bring out the flavour but allow the starch to be released so each grain can bind together. 



 Slowly start to add in the stock and boiling water. Add in enough to cover the rice and slowly stir until absorbed. Keep doing this until the rice is al dente, then  add the salmon and all the juice. The meat should be so tender that it falls away from the skin easily and breaks apart as you stir into into the rice. It is essential that you now take it off the heat, add a dollop of butter, cut a few more sprigs of dill, grate some parmesan cheese and leave it to stand for a few minutes. I like to leave it to stand for a minute or two as it allows all the flavours to be absorbed and deepen. 




I served mine with a green salad that was lightly dressed and cool white wine. I like risottos as you can always change the ingredients and create so many wonderful recipes.

  3. I am a huge fan of salmon and risotto, but have never mixed the two - we usually have mushroom risotto. I will definitely be bookmarking this and giving it a go!
