Yang Pang

Whenever anyone in my family is feeling ill there is only one dish we crave - Yang Pang! Over the years I have also managed to hook my boyfriend, as well as many friends onto the dish so I thought I would share it with you. It is a really easy quick recipe that instantly warms you and brings a smile to your face. 

Ingredients for 2 people

2 chicken breasts
1 litre of chicken stock
4 spring onion, finely chopped
2 cloves chopped garlic
1 stalk lemon grass
2 chillies chopped and deseeded
4 lime leaves 
1 tablespoon of Thai fish sauce
1 teaspoon of sugar
1 tablespoon of fresh lime
1 tablespoon fresh chopped coriander leaves

Firstly boil the chicken stock, when I haven't made my own I like to use the Touch of Taste liquid one as I think it is the nicest. Then add the raw chicken to the boiling stock, this may sound strange but it does work!

Next start chopping the other ingredients, by the time you have done this the chicken will probably be ready. Once it is no longer pink in the middle start to remove it from the stock and shred or slice it onto a warm plate. 


Then add the spring onions, garlic, lemongrass, chillies (you don't have to use both if you don't enjoy spicy meals), lime leaves and leave to simmer for about 10 minutes. 

After 10 minutes add the fish sauce, sugar, lime leaves, sprinkle of salt and pepper and cook for 3 minutes. Taste and see if you need to alter any ingredients. Finally add the coriander and serve piping hot! 

This should be like a broth and therefore the chillies shouldn't be too hot! For this meal I also added in some rice noodles which is delicious. 

I really enjoy making this dish as it is so quick and simple.
